Homemade Kind Nut Bar

Kind Bars were one of my Wife’s pregnancy cravings but with only 3 in a pack they were not lasting long and this craving was getting expensive. So I looked at the ingredients and got to work with replicating my very own version, and it is delicious!

Ingredients

Nut Bar Base:

  • 150g roasted almonds, roughly chopped
  • 75g roasted peanuts, chopped
  • 40g rice Krispies
  • 40g pumpkin seeds
  • 20g flaxseeds or chia seeds (optional)

    Syrup:
  • 110g honey
  • 1tbsp light brown sugar
  • 1tbsp unsalted butter
  • 1tsp vanilla extract

    Topping:
  • 100 g dark chocolate (70%)
  • Flaked sea salt

Method

1.Line 8inch square tin with greaseproof paper

2.Add all ingredients for the nut bar base in a large bowl and stir to combine.

3.To make the syrup, and the ingredients into a saucepan and heat on low until sugar has dissolved and butter is melted. Continue to heat for a further 2-3mins and the syrup has thickened slightly

4.Pour syrup over the nut base and mix until fully combined and all ingredients are evenly coated in the syrup. Transfer into the lined tin and push down firmly with the back of a spoon to compress evenly into the tin.

5.To make the chocolate topping, chop the chocolate and place into a microwavable bowl
and heat in 10second bursts until chocolate has melted fully.

6.Drizzle melted chocolate over the nut base and sprinkled with salt. Place into the fridge for 30-60mins or until set fully to set.

7.Slice into even portions and enjoy. Keep in an airtight container in the fridge for up to 7 days
