‘Accidentally’ Gluten-Free Chocolate Brownies Recipe

These brownies are the things I make the most. They are the perfect thing to whip up if you have visitors or want an easy gift for someone. They are the perfect gooey, fudgy texture are packed with chocolate! The accidentally gluten-free part of the bake came when I once ran out of enough self-raising flour and the only option was to swap the gluten-free stuff in. It was the best baking accident I have ever had!

Ingredients

  • 200ml veg oil
  • 150g caster sugar
  • 50g light brown sugar
  • 50g dark brown sugar
1tsp vanilla bean paste
  • 3 medium eggs
  • 60g coco powder
  • 100g gluten free self-raising flour
  • 1/4 tsp bicarbonate of soda
  • 200g white chocolate chunks
  • Pinch of salt

Method

  1. In a bowl whisk together sugars, oil, eggs and vanilla until fully combined.
  2. Add flour, coco powder, bicarb and salt and mix until nearly fully incorporated.
  3. Throw in the white chocolate and mix until all ingredients are fully incorporated and the white chocolate is evenly distributed.
  4. Pour into lined tin (I used an 8inch square tin) and bake at 170 for 25-30mins or until there is just a slight wobble in the centre.
  5. Once baked, allow to cool slightly in the tin before removing and placing on a wire rack to cool completely.
  6. Portion and serve.
