Browned Butter & Biscoff Cookies Recipe
These are everything you want a cookie to be! A contrast in texture from the crisp edge, chewy centre and the crunch of the dark chocolate chunks. Followed by the umami taste from the browned butter finished in the delicious, familiar taste of Biscoff.
Ingredients
- 180g unsalted butter
- 100g dark brown sugar
- 125g golden caster sugar
- 80g Biscoff paste
- 1 large egg
- 1 large egg yolk
- 300 grams plain flour
- ½ teaspoon bicarbonate of soda
- 200g dark chocolate chips
- 200g dark chocolate chunks
- 1tsp sea salt flakes

Method
- Place butter into a saucepan and heat until golden brown. Once browned, allow to cool slightly.
- Place the butter and sugars into a bowl and beat until combined before adding the biscoff paste and beating well. Add the egg and egg yolk and beat until well combined.
- Fold in the flour and salt until nearly combined before adding the chocolate chips and 3/4 of the chocolate chunks. Continue to fold until ingredients are fully incorporated.
- Roll the cookies into 14 large balls, place on a baking trey and put in the fridge for 45-60 minutes.
- Once chilled, place the cookies onto a lined baking trey, ensuring there is space between each cookie. Bake at 150C for 15-17mins, removing when cookies are crisp on the outside but still have a slight wobble in the middle.
- Once baked, top with the remaining chocolate chunks and some extra biscoff paste. Finally, sprinkle with a pinch of salt and then try to allow them cool fully before eating.
