Chocolate Fudge Cupcake filled with Chocolate Ganache Recipe

Nothing beats a chocolate fudge cake, until you top it with chocolate French buttercream and fill it with ganache. This rich and fudgy sponge is filled with a delicious chocolate ganache and topped with the most luxurious chocolate French buttercream to make this the most indulgent cupcake on the planet.

Ingredients

  • Cupcake
  • 140g Self raising flour
  • 100g Golden caster Sugar
  • 80g light brown sugar
  • 40g Cocoa Powder
  • 1 tsp Salt
  • 2 Eggs
  • 120g sour cream
  • 120g Veg Oil
  • 100ml Coffee
  • Ganache
  • 60g dark chocolate
  • 60g cream
  • 1 batch of French meringue buttercream

Method

  1. Place the eggs, sugars, sour cream, oil and coffee in a bowl and whisk to combine (you will not taste the coffee, trust me!)
  2. Add the flour, salt and coco powder and combine fully before dividing equally between 12 cupcake cases.
  3. Place the cupcakes in a pre-heated oven at 150C and bake for 20-22mins or until skewer comes out clean. Once baked, remove and all to cool fully.
  4. Whilst the cupcakes are baking, make 1 batch of my French meringue buttercream
  5. To make the ganache, heat the cream to a gentle simmer and pour over the chocolate. Allow to stand before combining fully.
  6. To assemble, core the centre of each cupcake and fill with the ganache. Pipe the buttercream (I used a 6B tip) and top with a flake. Serve and enjoy!
