Ciabatta Rolls

No knead, no fuss. Just a delicious ciabatta roll that is super simple to make and will taste incredible! This crust roll or loaf will make for the perfect sandwich or accompaniment to your favourite dish.

Ingredients

  • 450g strong bread flour
  • 350g warm water
  • 50g olive oil
  • 7g instant yeast
  • 10g salt

Method

  1. Place water, oil and yeast into a square dish and mix before adding the flour and salt. Combine well and then cover and rest for 30mins to allow flour to hydrate – the dough will be very sticky at this stage.
  2. After 30mins, wet hands and use the stretch and fold technique by taking one side of the dough and lifting, stretching and folding onto the other side. Repeat this with all four sides of the dough.
  3. Cover and allow to rest again for another 30mins.
  4. Repeat this process 2 more times (making 3 stretch and folds in total). The dough will become smooth, soft and stretchy.
  5. Generously flour the surface and the turn out the dough from the dish and then dust the top with more flour. Use a floured dough scraper to divide the dough into 8 pieces.
  6. Transfer to a trey lined with greaseproof paper and set aside for 20mins whilst the oven pre-heats to 200C. Place the dough into the oven and throw 4 ice cubes into the bottom of the oven and bake for 20-25mins, or until crisp and golden.
  7. Once baked, place onto a wire rack to cool, or serve whilst still warm
