Cinnamon Buns Recipe

These cinnamon rolls are the ultimate comfort treat, with a fluffy, buttery dough that has been lightly spiced. It is then swirled with a rich cinnamon-sugar filling and a touch of orange zest and scattering of dark chocolate chips. Baked to golden perfection before being topped with luscious spiced cream cheese frosting.

Ingredients

Dough

  • 500g strong white flour 
  • 7g yeast 
  • 25g golden caster sugar 
  • 300g milk (warmed) 
  • 1 egg 
  • 50g butter 
  • 1tsp salt 
  • 1tsp mixed spice 
  • Zest of 1 orange (optional)

Filling 

  • 150g butter 
  • 250g light brown sugar 
  • 2tsp cinnamon 
  • 1tsp mixed spice 
  • Zest of 1 orange 
  • 100g dark chocolate chips

Glaze 

  • 150g double cream 
  • 200g cream cheese 
  • 50g butter 
  • ½ tsp cinnamon  
  • ½ tsp mixed spice

Method

  1. Add the flour, yeast, salt, sugar, mixed spice and orange zest into a bowl with a dough hook and mix. Add the milk, egg and butter and mix.
  2. Knead the dough for 12-15 minutes, until the dough cleans the side of the bowl and the dough is smooth, elastic and no longer sticky.
  3. Shape the dough into a ball a ball and place into a lightly oiled bowl. Cover and allow to prove for 1hour, or until doubled in size.
  4. To make the filling, beat the butter until pale. Add the sugar, spices and orange zest and combine.
  5. Once risen, lightly flour a worksurface. Place the dough on top and roll into a rectangle approx. 30cmx40cm. Spread the filling evenly and then scatter the chocolate chips across the dough.
  6. Tightly roll the dough to create a long tin log. Cut the ends off of each end before slicing the remaining dough into 12 even pieces. Grease a large tin sized (ADD IN THE SIZE OF THE TIN) and place the slices into the tin, cover and allow to prove again for 1hour, or until doubled in size.  
  7. Pre-heat the oven to 170C and bake for 25-30mins. If the buns look too dark, cover with foil after 20mins to prevent them from burning.
  8. To make the frosting, beat the butter and cream cheese along with the spices. Add the cream and whisk to soft peaks.
  9. Once baked, allow the buns to cool for 5minutes before spreading over the frosting. Serve and enjoy!
