Classic Vanilla Fudge Recipe

There is something extremely nostalgic about homemade fudge. This fudge is packed with vanilla with a crumbly texture that will melt in the mouth – simply delicious!

Ingredients

  • 120g unsalted butter
  • 200g light brown sugar
  • 200g Demerara sugar
  • 1 can condensed milk
  • 150g whole milk
  • 2tsp vanilla
  • Pinch of sea salt

Method

Grease and line an 8inch square tin and set aside.

Place the butter into the saucepan on medium high heat and allow to melt. Once melted continue to cook the butter until it reaches a golden colour.

Reduce the heat to low and add in the sugars, condensed milk and butter. Continue to cook until the sugar has dissolved, stirring continuously.

Increase the heat and bring to a boil for 10-15mins until the mixture reaches 115C, stirring constantly.

Remove from the heat and allow to cool slightly to around 110C and then add the vanilla and salt. Beat the fudge thoroughly for 5-10mins until it becomes thick and dull in colour. Transfer the fudge into the tin and level, pressing with a spoon and allow to set fully. Then cut into pieces and serve!
