Method

Grease and line and 8” square tin and set aside.

Make a caramel by placing the sugar, honey and golden syrup into a pan and heat on medium low until the sugar is dissolved.

Once dissolved, increase the heat slightly and allow the caramel to reach 150C and become a bronze colour. Once it reaches this temperature, immediately remove it from the heat and stir in the bicarb.

Beat continuously until the bicarb is combined and then pour into the lined tin and allow to set.

Once set and cooled fully, break the honeycomb into pieces and cover or drizzle in the melted chocolate. Add a little sprinkle of sea salt and then set aside until the chocolate is set.
