Posh Giant Cookie Recipe
This decadent giant cookie with perfect crisp edges and a soft, gooey centre is packed with chocolate and nuts to make for the perfect treat. Made even better with the topped of praline, this cookie is the perfect bake for any occasion.
Ingredients
- 150g soft unsalted butter
- 125g caster sugar
- 100g brown sugar
- 1 medium egg
- 1 medium egg yolk
- 300g plain flour
- 50g praline paste
- 75g hazelnuts nuts
- 75g pecans
- ½ tsp bicarbonate of soda
- 125g dark chocolate chips
- 125g chocolate bar (70%)
- 1 tsp Flaked sea salt
Topping - Praline paste
- 30g dark chocolate chunks
- 30g blonde chocolate
- Pecans
- Hazelnuts

Method
- Roast nuts at 160C for 5mins or until lightly golden.
- Beat butter and sugars until pale. Add the eggs and continue to beat until well combined mixing in the praline paste.
- Add flour, bicarb and salt and fold until nearly combined then add nuts and chocolate. Fold through until fully combined.
- Spread cookie dough evenly in the lined 10inch tin. Bake for 25mins or until lightly golden, crisp around the edges with a slight wobble in the middle.
- When still warm, pipe in some praline, top with some dark chocolate and some more nuts. Serve and enjoy!
