Posh Millionaires Shortbread Recipe
I absolutely love Millionaires Shortbread and often my sweet tooth gets the better of me when this is around, and I eat way too much! However, when paired with a layer and salty, crunchy nuts it balances out that sweetness and allows you to eat way more, which is perfect for me!
Ingredients
Shortbread
- 200g butter
- 100g golden caster sugar
- 275g plain flour
- 1tsp vanilla
- 1/2tsp salt + extra to finish
Nut layer - 100g peanuts
- 50g pecans
Chocolate layer - 200g chocolate
Caramel - Can condensed milk
- 150g butter
- 130g golden caster sugar
- 60g golden syrup
- 1tsp vanilla
- 1tsp flaked sea salt

Method
- Prepare tin by lining bottom and sides with greaseproof paper. Place nuts in the oven and bake at 160 for 5mins before removing and setting aside for later.
- To make the shortbread cream together your butter and sugar until pale before adding your vanilla. Add in your flour and bring together to combine ingredients fully. Avoid over mixing otherwise it won’t be short!
- Crumble mix into your tin (this helps spread it evenly) and then smooth out. Pierce all over with a fork and then bake at 160 for 20mins or until golden. Remove from oven, top with the nuts and allow to cool.
- To make the caramel place all of the ingredients into a sauce pan. Melt the butter and dissolve the sugar on a medium low heat, stirring constantly. Once dissolved, increase heat to medium, stirring constantly for 5-10mins.
- Allow the caramel to thicken slightly and turn to a golden brown. Be careful at this stage! If you take it too far, it will become too toffee-like and will be less enjoyable to eat (although still taste nice!)
- Pour your caramel over the nuts and biscuit and spread evenly. Now melt the chocolate and pour over the caramel.
- Allow the caramel to cool completely and the chocolate to set. Sprinkle with some flaked sea salt, slice into portions and enjoy!
