Pumpkin Marble Cake Recipe

This delicious chocolate and orange marbled bundt cake is transformed into the perfect pumpkin cake. Coated with a luxuriously light cream cheese frosting, it is a perfect and simple Halloween bake!

Ingredients

Cake

  • 180g butter, softened 
  • 50g veg oil 
  • 300g golden caster sugar 
  • 5 large eggs 
  • 240g milk 
  • 400g self raising flour 
  • Zest 4 oranges 
  • Pinch of salt

Orange Batter

  • Juice of ½ an orange  
  • Orange food colouring

Milk Chocolate Batter

  • 2tbsp coco powder 
  • 2tbsp milk 
  • ½ tsp espresso powder

Cream Cheese Frosting

  • 400g cream cheese 
  • 120g icing sugar 
  • 150g unsalted butter 
  • 300g cream 
  • Zest 1 orange 
  • Orange food coloring

Method

  1. In a bowl, rub the orange zest and sugar together. Add the butter and beat until pale and fluffy then add the oil. Add your eggs individually, mixing well between each addition 
  2. Add half of the milk and mix before adding half of the flour. Repeat this process again, mixing until the flour is just combined.
  3. Divide batter into two even bowls. To make the orange batter, add the ingredients and fold through the batter. To make the chocolate batter; make a paste in a small bowl by combining the ingredients together. Remove some cake batter and mix into the paste before incorporating into the main batter.
  4. Fill your prepared tin, adding alternative batters. Once all of the batter is added, use a skewer to swirl through to create a marble effect. Bake at 170 for 45-50mins or until skewer comes out clean.
  5. Once baked, allow to stand for 5mins then turn out and allowing to cool fully.
  6. Make the cream cheese frosting, beat the cream cheese and butter together before adding the icing sugar. Add the orange zest and orange food coloring and combine. Add the cream and whisk until soft peaks.
  7. Use a pallet knife to cover the cake with the cream cheese frosting and then create some grooves to give the pumpkin effect. Place some flakes in the middle for the stem, slice and enjoy!
