Shortbread Cookies Recipe

A classic biscuit with a chocolatey, nutty twist that allows you to really make your own! This buttery, melt in the mouth shortbread that is drizzled with a little chocolate and crushed nuts and berries – delicious!

Ingredients

  • 250g plain flour
  • 150g unsalted butter
  • 75g golden caster sugar
  • 1tsp vanilla
  • 1tsp flaked salt

    Flavourings
  • 1. 1 orange zested & 30g chocolate chips
  • 2. 1tsp mixed spice & ¼ tsp nutmeg
  • 3. 1 lemon zested & 40g chopped pistachios

    Decoration
  • 100g melted chocolate
  • Edible chocolate balls
  • Chopped nuts

Method

Place the butter, sugar, salt and flour into a bowl and use your fingertips to rub together until it resembled a breadcrumb texture.

Add in your perfect flavour combination (I have just gone for vanilla but given a few suggestions that could work well) and combine.

Use your hands to bring the dough into a ball then roll to approx. 1cm thick on a lightly floured surface. Use cutter to cut your desired shape and then place on a lined trey and put in the fridge for 45-60mins to firm up.

Bake for 15-18mins in an oven pre-heated to 160C until lightly golden on the edges. Allow to cool fully and then decorate before packaging ready to serve
